Vineyard: A DISTINCTIVE BLEND FROM KLAU MINE VINEYARD IN THE ADELAIDA DISTRICT, THIS WINE IS COMPOSED OF 61% TANNAT, 21% CABERNET SAUVIGNON, AND 18% PETIT VERDOT. KLAU MINE VINEYARD IS THE FURTHEST SOURCE OF FRUIT FOR OUR WINERY FROM THE ADELAIDA DISTRICT, AND ITS UNIQUE TERRIOR AND PROXIMITY CONTRIBUTE TO THE STRUCTURED PROFILE OF THIS WINE.
wINEMAKING: PRIMARY FERMENTATION TOOK PLACE IN UPRIGHT FOUDRE WITH ON-SKIN FERMENTATION. ALL THE GRAPES WERE HARVESTED ON THE SAME DAY AND CO FERMENTED FROM THE VERY BEGINNING. THE WINES AGED IN A COMBINATION OF 25% NEW AMERICAN OAK AND 75% NEUTRAL OAK, AND AFTER FERMENTATION, IT WAS RACKED INTO ONE LARGE FORMAT FOR FINAL AGING.
tasting notes: A ROBUST WINE WITH FLAVORS CHAPPARAL, LEATHER, AND BLACK CURRANT. THE BLENDS STRUCTURE COMBINED WITH SUBTLE INFLUENCES FROM THE AMERICAN OAK ADDS DEPTH AND COMPLEXITY, MAKING IT AN IDEAL PAIRING WITH GRILLED MEATS, HEARTY STEWS, OR RICH SAVORY DISHES.
